Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!


A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

In general I'm not a huge eggplant lover, ok that sounds really weird lol🤣 But I do like it thin with bread crumbs...it looks delicious!! My mom used to put a bit of sugar in the ricotta and it gave it just a smidge of sweet to it. If you were selling it I'd order two trays!!

😋All looks incredibly delicious. I remember trying eggplant parmesan years ago and it was terrific.
Unfortunately, it doesn't agree with me. Must be a food allergy or something.

@SethGreene531 I knew about some, but I wonder if Sudafed used to have it. They changed something a while back and it was okay when I stupidly tried it again, but before that I had severe stomach pains like I was dying. I had a similar reaction as Zithromax.

Yeah, it’s really scary how they can’t always be trusted. I have to have my MRIs done in a hospital now with a doctor available in case I react and I have to be premedicated and they’re also trying to use only a different contrast now to be safer.

I guess you’re right. Hopefully we don’t have any more serious issues like that though 😅

I like eggplant dishes. You have Iranian friends. Have you ever tried their aubergine curry? It's delicious. You may ask them about it when you meet them again if you haven't tried it.

Yes, love it, but it is not to everyone's liking. A local Japanese restaurant served it in a sort of marinade, with sesame seeds, it is wonderful.

@samueltyler2 Oh nice! I recently tried a recipe from an Italian woman w/it that was amazing! I didn’t eat the sausage(fam did), but it had that, grilled eggplant, broccoli rabe, melted provolone and a mayo/pesto mix all on a ciabatta roll- I used fresh seeded Italian bread from the Bronx instead. Unbelievably good!

I love breaded and fried eggplant! It's awesome! A friend of mine once made a layered Eggplant Parmiagiano, but in addition to the Parmiagian cheese and the mozzarella, added shredded cheddar to some of the layers. Soooo delicious!!!

I love to make eggplant stewed with meat, onions, a bit of garlic, tomato sauce & chopped tomatoes. Season it with ginger, salt & pepper. I have made it with piece of chicken, chicken breast chunks or ground beef. Always served with Basmati rice. Also like to make eggplant omelets with thinly sliced eggplant browned in olive oil.

This old country recipe is good. I'm sure you could jazz it up. Its pretty easy . You can freeze boiled eggplant!

@MellyMel22 i toast the bread (6 pieces) then stack it all together and cut it into 1”x1” cubes and then drop them into 1 1/2 sticks of herb seasoned butter and stir till the butter is soaked. After the casserole hasbaked with the parm on it I spread the bread overtge top, add more parm and bake about 10 mins till the cheese melts. Its a great stuffing alternative.

I love love love eggplants!!! Grilled, fried, baked…all super tasty! I do prefer the skinnier kind than the bulbuls egg shaped ones because the skin is softer. Every year I plant different kinds in my garden and all summer long, I make eggplant dishes😋

Yours look so yummy! Save me the leftovers!!!

@Haniazed Thank you! I love it too! I make it different ways too. I love them in balls too and I slice them round and grill with Italian seasonings then melt a little Gorgonzola on each, it’s sooo good! My 10-year-old even likes it like that.

I love it. That all looks so good. Oddly as a little girl I didn't like the texture and my Mom made the best eggplant Parmigiana I ever had. As a little Italian girl that was like the antichrist and not acceptable. :)

I love almost all foods, but the one thing I absolutely can't stand is eggplant. More for the texture than the taste, but I just can't stomach it.

@BizSuitStacy That’s how I felt growing up. When my mom started cutting hers thin, it was better to me because it was never tough. Then when I started making, I did it even thinner. My eggplant appears thicker than it is, because I flour and bread it w/buttermilk. I don’t care for eggs.

Nope. Don't like the taste or texture. Breading doesn't hide it from me either.
It tastes right or wrong. For me it's wrong.
I guess it's like REAL scallops to some. The tartness when broiled with butter is what makes them good. If you've got no tartness you've been suckered with fake scallops.
A cheating bar tender can't get away with substituting original Tanqueray with just any gin either.

@MellyMel22 The good meal the portobello was a big ole dude on the plate like a steak with all the sides. I have no idea how it was cooked. I ordered it similar at another place a couple yesrs after. Rubberized awefulnes. I tried it with some meal which everything was breaded and fried. That was the end.same aweful texture. I quit . There's more to it than just how it's cooked. Same with leg of lamb. You'll never get the greasy past me. Says the bacon lover.

@Gibbon Maybe it’s the high heat like frying it that makes it rubbery 🤔 I’m not sure. Overcooked will def do it though I think.

I’m not a meat eater, but I’ve heard others say similar about lamb.

@bijouxbroussard I didn’t like it until my mom made it and I tried hers as a teen. I learned that I only like eggplant parm sliced very thin with breadcrumbs. My daughter is the same and won’t eat it unless I make it. I found two places that make it similar. One where I went to college, 45 mins from me and the other closest it can be to my neighborhood. My daughter won’t even try it though lol. Now I guess I acquired a taste for it other ways too.

@cherokeepatti I don’t like tofu, but the only way I haven’t liked eggplant as when it was so thick and seemed a tough texture. Those times were in restaurants.

@Tumbleweed They're the worst!! But so are most places who make it. Some make it do tough to chew and you literally can’t chew some at all. I think it has to be sliced very thin and cooked right. I remember getting it at so many places and was so grossed out. So I make it myself and it’s so much better. You can also pick ones that are too bitter and seedy.

@4meAndyou I use flour, then a seasoned buttermilk mix and then bread it. I’m not a fan of eggs and I smell them easily and won’t eat whatever it is 😩 Sometimes at bakeries I can smell it strong on cookies. Clearly I don’t like eggs lol.. I use less in my recipes if I have to use them.

@Degbeme I have turned a few eggplant haters into only my eggplant lovers. Two being friends, they always ask me to make it and it takes forever so it’s not fun 🤨

But really I used to only eat my mom‘s b/c she slices her kind of thin too, but most places don’t and it can be chewy and tough 🤢, so I started trying to make it extra thin and that’s been the best way for me. My neighbor smells when I make it and will text me to let me know she’s aware b/c she wants some 🤣

@mysteryespresso Thin sliced eggplant breaded and fried, rolled up w/ricotta mix(I use a little s&p, garlic powder and fresh spinach) and top it sauce and cheese and bake. A good sauce is key I think!
