Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

Roasted eggplant with walnut paste it’s a Georgian ( 🇬🇪) dish and it’s delicious

@Arantxa that sounds good. I think I could do a food tour through Georgia. There was a tennis player who lived in the athletic dorms where I worked and she told me how good the food was. Then I saw it featured on a travel channel. Looks so tasty.
