In general I'm not a huge eggplant lover, ok that sounds really weird lol🤣 But I do like it thin with bread crumbs...it looks delicious!! My mom used to put a bit of sugar in the ricotta and it gave it just a smidge of sweet to it. If you were selling it I'd order two trays!!

@Coralmist Thank you! I haven’t heard of sugar in ricotta! I put it in my sauce though for the acid.

@MellyMel22 they make different kinds but they yummee.i deep fry mine then cook in lil butter and season them up with onions and spices

@candycane I cooked them in an air fryer for a baby and they seemed so rubbery so I started boiling them for her. I used a little garlic oil, butter, s&p and a little garlic powder. But I can’t pic a sauce for them b/c for ex, I feel like brown gravy would go with the potato part but not the pasta part 😅
