Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!


A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

In general I'm not a huge eggplant lover, ok that sounds really weird lol🤣 But I do like it thin with bread crumbs...it looks delicious!! My mom used to put a bit of sugar in the ricotta and it gave it just a smidge of sweet to it. If you were selling it I'd order two trays!!

@Coralmist Thank you! I haven’t heard of sugar in ricotta! I put it in my sauce though for the acid.

@candycane I have never tried sauerkraut 😳 Though I don’t eat meat, so there probably isn’t really much to try it on for me 🤭

@MellyMel22 they make different kinds but they yummee.i deep fry mine then cook in lil butter and season them up with onions and spices

@candycane I cooked them in an air fryer for a baby and they seemed so rubbery so I started boiling them for her. I used a little garlic oil, butter, s&p and a little garlic powder. But I can’t pic a sauce for them b/c for ex, I feel like brown gravy would go with the potato part but not the pasta part 😅

@MellyMel22 no if you boil them then fry in butter they better.but I deep fry then fry in butter as I like them crunchy
