Finally made eggplant rollatini again

I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend

I have proof my arteries are clear btw

There’s a piece of chicken in here too..

Love eggplant and use it in my Italian, Chinese, Thai and Mediterranean recipes.

@Northwest Nice! Have you ever tried making eggplant balls instead of meat balls?

@MellyMel22 I have not, but looks delicious. I don’t eat meat. Thinking about adding diced mushrooms to the mix.

@Northwest That could be good too. I baked the eggplant and put it in a blender like a recipe I saw did. I was shocked that my kids loved them. I thought they were better the next day, but still good the first.

@MellyMel22 I’ve used finely diced eggplant and mushrooms for other recipes. I toss them in a large bowl with a smidgen of olive oil, then spread the mix in a large baking sheet and air fry at 400F until brown.

I add diced tomatoes for pasta sauce, or I fill artichoke hearts and bake,

@Northwest Sounds good! You just reminded me that I forgot to get artichokes

They were right in front of me, but I was trying to find a good green pepper and forgot when I was done! My 9 year old goes craZy for stuffed artichokes.

@MellyMel22 during winter, I cheat and buy frozen artichoke hearts.
