Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

I loved eggplant until I ordered some at Olive Garden a couple years ago and it was terrible... now I have no interest in eating it at all... :(

@Tumbleweed They're the worst!! But so are most places who make it. Some make it do tough to chew and you literally can’t chew some at all. I think it has to be sliced very thin and cooked right. I remember getting it at so many places and was so grossed out. So I make it myself and it’s so much better. You can also pick ones that are too bitter and seedy.

@MellyMel22 It was terrible. My step mother is Italian/Polish so she can COOK!! And I've never tasted it again as good as she made it!
