I love to make eggplant stewed with meat, onions, a bit of garlic, tomato sauce & chopped tomatoes. Season it with ginger, salt & pepper. I have made it with piece of chicken, chicken breast chunks or ground beef. Always served with Basmati rice. Also like to make eggplant omelets with thinly sliced eggplant browned in olive oil.
@cherokeepattiOh nice! I love it grilled with a little melted gorgonzola on it! And I recently tried making eggplant balls and they came really good too.
