Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

I love it. That all looks so good. Oddly as a little girl I didn't like the texture and my Mom made the best eggplant Parmigiana I ever had. As a little Italian girl that was like the antichrist and not acceptable. :)

@Idontbelonghere Thank you.. That was me and stuffed artichokes! I was the only kid in my fam who didn’t like them holidays. Now I love them and so does my 9 year old!
