Are you a fan of Eggplant? The food 🤨

Finally made eggplant rollatini again 😋 I like mine toasty w/extra sauce.. It’s so good, but just so time consuming to make!

A thin slice pepper jack under the mozz/prov blend 😋 I have proof my arteries are clear btw 😅

There’s a piece of chicken in here too..

@Rokan I can honestly say if you get it cooked/cut certain ways you might find it disgusting and if you get it cooked and cut other ways you might love it. Most places I’ve had it at was always gross to me, but some people love it at those places. I don’t like it when it’s tough. I make it different ways but make sure it’s not that tough to chew texture.

@MellyMel22 but what is it like a zucchini? Ill eat like small pieces of zucchini in a stirfry or soup but nothing big.
