Usually in the restaurants that serve fish and chips in the UK and Fish and Fries or onion rings in the US the fish is usually cod or haddock. But I love fresh caught sea fish of any kind, and fresh water wise here trout, perch, walleye, pike, and bluegill.

Here in The South catfish and whiting are extremely popular. The batter's also more like what you get on your chicken at KFC. It's also served with coleslaw rater than mushy peas.

You have the good stuff there. The fast food fish & chips here places started slicing their fish thin and doubling the batter a long time ago. Long John Silvers closed up here several years ago because people weren’t having it. It used to be the number one chain for fish & chips in the USA. . It is very unhealthy. That fish on the plate in the photo looks delicious.

afaik most 'fish and chips' fish around me tends to be Cod. much farther west and south fried catfish becomes more of a staple, although it's never really done with fries or chips... or anything other than hushpuppies from what I recall.

@dirge We have a fish known as rock eel, and I was told it's supposed to be catfish. No real idea though. Tastes nice and only has one bone down the middle, but it's nothing to do with eels.
@SW-User interesting. back home they talk about flathead catfish that get big enough that you can pull an edible fillet from the top of their flat heads.

@SW-User It's dogfish, smooth hound, or huss, which are small sharks that can be fished more sustainably than cod and halibut. Really delicious.

When I order it at a restaurant, I only do so if it's cod... too often they try to substitute it with pollock or some other whitefish.
I'd accept haddock or halibut, but that's almost never an option here.

@Ontheroad My local chippy always has cod, I've never known them to serve pollock, but the price of the fish is extravagant. £11- without the chips!

In the US, when it’s called "fish & chips" (we usually call it fish and fries) it’s generally cod.
Plaice is a type of flounder, which I find preferable to cod....but it’s usually not an option in places that dell “fish & chips”.

In my area it's usually cod for fish and chips outfits. For seafood outfits it's fresh flounder or grouper in my area.
