@LordShadowfire I shred it, then cover it with kosher salt. (I also add onions, garlic and dill to mine) You then squeeze it with your hands and that brings out the liquid. Do this until it is seeming to get softened. Then squish it down and cover it well, leaving it on your counter for 4-5 days. It will start foaming. (You are best to check online for proper instructions for fermenting. I would hate for you to risk losing the cabbage)
After about 5 days, I put it into mason jars and they keep for a long time like that

@bijouxbroussard it’s similar to kimchi, yes…my guy works with a Russian guy and he says mine is the best cabbage he has had 😆😆 He’s always asking for more haha

I make every week red cabbage salad with yogurt, small dab of mayo mixed in, lemon juice. Dried onion, shredded carrots, cranberry dried fruit or blk raisins, seasonings & dash of stevia. I use it on vegi burgers topping on most anything.gr8 probiotic. Also make kimchi.

Add some grated carrot and sliced spring onion. Mix up a half and half mayo and yogurt dressing. Leave it all to sit for a while and then add some toasted sesame seeds and peanuts.

@bijouxbroussard the rabbits around here are quite brave. My border collie almost got one last nite. She said they are fair game if they come in the yard. LOL
