Second would be Gary Cooper and Walter Brennan in The Westerner (1940)
Third has to be The Big Country with a host of acting legends.
Forgot to count Dead Man (1995). It's an "acid Western" featuring Johnny Depp and Robert Mitchum in his final movie. In fact, I'd recommend this over my other 3 choices...

Unforgiven is excellent, but it is a knowing critique on the genre reversing/undermining the roles usually fulfilled by the characters.
I love Once Upon a Time in the West but that, too, owes a lot to previous films and is great for showing off by identifying the references (😂) and an unequaled music track.
Best classic? Probably High Noon for me.

It's about a samurai who comes across a carneval in the middle of nowhere, and helps them regain control against the guy who demands money to leave them alone.
It's a good mix of western, samurai, action, drama, and romance. I think that's the best way to describe it to someone who hasn't seen it.
