You ever cook a meal, but know you could never make it the same way twice?
The spices on the roast veges were awesome tonight but I just know I'll never get it that way again... Ground Black Peppercorns, Ground sea salt, cumin, Garlic powder, onion powder. How much did I put in 🤷🏻
Yes. Several years ago I had some relatives coming and did a couple of dishes. One of them was chicken and mushroom done in a slow cooker with olives and crème fraîche(*) added towards the end of cooking. I made it up a I went along, didn't keep a record of exactly what I used or the quantities and so it was something improvised that I never quite replicated again. It went down a treat on the day though! 😊
(*) literally 'fresh cream', but it is slightly soured by the addition of a bacterial culture.
Agreed that is one of the biggest struggles with cooking or times where I make something and it it tastes amazing and I'll go to make it later on and it still tastes good but I can definitely tell it was not as great and I feel like I did everything the same way
My Grandma gave several recipes to my Mom..they seemed to her too general,as if she didn't want to give away the secret sauce..as she began to cook more she realized you kinda developed a sense of how it wa done

I NEVER measure...unless I am baking quick bread or something similar. I DO write down my "recipes" but I am guesstimating how much salt I poured out in the palm of my hand, etc, etc.
