What is one unusual ingredient you add to a mainstream dish that instantly elevates it?

This is a super basic one, but when I’m making a quick grilled cheese sandwich I like to add a little bit of chipotle mayo to it. It blends right into the cheese so it’s virtually unnoticeable (perfect for picky children!). It just gives a little bit of smokiness that everybody loves and that goes so well with the sandwich.

Not sure I’d call it unusual, but I love these hot peppers so many things I make, even soup.

@deadmoon Oh nooo 😩

I found a pizza oven I think over a year ago and you wouldn’t believe how if you get the temps right, can roll dough thin and make a good marinara, it’s like Bronx pizza 😋 I use store bought dough to make it easier lol.. When I buy pizza b/c I’m too tired to cook, it’s like damn I wish I just took dough out and made it myself! Once store bought gets home the bottom isn’t as crispy, but this thing I have is like out their oven!

@MellyMel22 I’ve tried to make NY-style pizza at home! California’s idea of NY-style pizza is atrocious. But this is hard to make outside of NY. The specific mineral balance in NY water plays a pretty huge role in making amazing pizzas. This has been studied and is often cited as a contributing factor for why truly authentic NY pizza is very difficult to replicate outside of the city, even by born and raised New Yorkers. 😭

@deadmoon I’m not sure about the dough there, but I’m telling you that I wouldn’t lose it for pizza if I had it still. Keep in mind I was raised on the Bronx and ate pizza at least every other day from age 10 on 🤭

Had the kids over for Christmas holidays. Pick eaters. If its not out of a packet their not interested. They will eat Taco Mince though. But none of the salad. So I added: celery, zucchini, capsicum carrot and mushrooms to the mince. With some broad beans on the second time I cooked it. I wanted to add broccoli but thought it would be pushing it.

I add sesame seed oil to tuna or chicken salads. It perks up the flavor and makes it absolutely amazing!
PatientlyWaiting25 · 46-50, F
Chillies are always in my fridge. I add them to so many things.
DragonFruit · 70-79, M
I don't add mayo to anything, as it makes me violently ill.
My ingredient is sun dried tomatoes or red peppers...gives a bit of added kick.
YoMomma ·
@DragonFruit isn't it heated to a serialized temperature? commercialized mayo anyway? pasteurized so to speak?
DragonFruit · 70-79, M
@YoMomma Pasteurizing doesn't seem to do the trick, but well cooked eggs are OK for me to consume. This is apparently not as uncommon as some might think, as I know other people who have the same problem with uncooked eggs. Custards are tricky, because some are cooked and some aren't. It's not technically an allergy, but an intolerance to the uncooked egg.

I make my own harissa paste with tons of garlic on it. A small amount will uplift the blandest of foods!

a can of pineapple into a chili con carne... the sweetness and consistence is a great addition to the heat
Jenny1234 · 56-60, F
Ajvar. It’s a roasted red pepper sauce I discovered in Eastern Europe. It’s to die for
Levenrack · 46-50, M
@deadmoon kind of similar to yours, but I use garlic powder or salt with mayo for my panini press.
deadmoon · 31-35, F
@Levenrack Yeah, you really can’t go wrong with a good sauce to put on a sandwich, panini, or burger. A good sauce will elevate just about anything and garlic or salt with mayo sounds like a pretty delicious option as well.

Cayenne pepper to cheese sauce, especially when making macaroni cheese.
deadmoon · 31-35, F
@RodneyTrotter1 Omg, yes! I do that too and you are right, it is amazing. A little bit of hot sauce, onion powder, and black pepper on top of the cayenne pepper also pairs well with Mac and cheese if you want a more flavorful cheese sauce with a mild kick. It just makes it taste a little bit more spiced.
eyeno · M
I'll have to try it 👍🏻
deadmoon · 31-35, F
@eyeno Would highly recommend. It really elevates a cheese sandwich and makes it taste a million times better. It doesn’t require a lot of it either. Just a little bit goes a long way.
Mudkip · 31-35, M
Adding banana peppers on some stews, love the crunch and flavor

Saffron yoghurt spreads on toasts.
Also can be infused in mayo.

@deadmoon
deadmoon · 31-35, F
@scorpiolovedeep Where can saffron be purchased? I only ask because even though I’m familiar with what it is… I don’t think I’ve ever seen it sold anywhere around here. Too exotic a spice, I guess. I only read about it in books, but never seen or tried it myself.
scorpiolovedeep · 51-55, M
Saffron is also for making sweets and desserts.

You can buy it online.

Or some Middle Eastern / South Asian stores.

Cigarguy · 41-45, M
I put a tiny bit of cinnamon in my chili
deadmoon · 31-35, F
@Cigarguy This works! I find a little bit of Mexican chocolate (it’s a bit more spiced) can also produce a flavorful chili that is slightly sweet and spicy.

A tablespoon of sour cream to scrambled eggs
A teaspoon of english mustard to cheese scone mix
Fresh chopped chillies to spaghetti bolognaise
I like to add a little bit of American mustard when I make fresh tomato sauce for pasta

Glob of butter.

Try it on your steak. Or in your risotto.

Or….in your coffee. Yup. Try it
deadmoon · 31-35, F
@LunarOrbit Glob of better on steak, I get. But on coffee? 🤔 What does it do?
