Being gluten free sucks when you live in a developing country

Nobody gives a shit. There is no gluten -free option on menus. EVERYTHING has gluten. Ppl act like it's sth you do for show-off and they think being gluten free and being vegan/vegetarian is basically the same thing. There is just two company that produce gluten-free stuff and one of them sucks, and for using the other you should be approved on a list that you have celiac. You know how many ppl are on that list where I live? 50! Only 50 ppl on that list in this city, and I live in a metropolis! Yeah, ofc you can find gluten-free products imported from other countries, but they are too expensive to live on them.

I’ve made potato waffles out of mashed potatoes, eggs, baking powder, salt and pepper….you can also make flatbreads out of it and other non-gluten flours.

@Oster1 Oh yes I understand that. My mother made a simple chicken casserole and she was the only person I knew that made it. I make it a few times and think of her and wish she could make it again for me.

@cherokeepatti Patti, just know that I’m feeling that now. I understand. The tears are running down my face as I write this. I’m very fortunate, thankful and grateful. To have my Mother cook another dish for me, would be the most precious want, that I have. Some may think that I have everything but I will no longer have that. It’s the simpler things in life that only mattered to me anyway. I miss my parents so much and they gave me everything. I most definitely would trade it all, to have them back. I’m sure you feel the same way, with your Mother!

J/k, some doctors are saying the gluten problem doesn't even exist. The real issue is people eating too much of what they shouldn't be eating in the first place.

@PatKirby Wheat products inflame my joints, when i stop eating it that stops. It started about 10 years ago, about the same time Roundup started being used heavily on wheat crops

@cherokeepatti well, whatever lol its not the same, its something different for me. the way i cook it it tastes good. its worth teh extra buck a box or so for the convenience factor on occasion. it makes cooking those kinds of dishes easy. i use my rice cooker for plain rice or sushi rice.

Poor thing. I feel sorry for you because celiac is so extremely harsh. People aren't aware it's more than a sensitivity, an allergy or intolerance; but an autoimmune disease in which gluten destroys the body. Fresh foods are available right? Coconut or rice flour? I rarely rely on the processed gf substitutes, that are not only overpriced, but also toxic with all that xantham gum. Check out Pinterest, as there's a wide variety of options that are quick, inexpensive and healthy. Once I learned, the diet became relatively easy peasy. Good luck, you'll get there! It's just unfortunate that you don't have the dining out options, but they're not always reliable either.

Most food from the national cuisine is gluten-free actually. I can buy rice flour and/or corn flour.
Also I didn't know xantham gum is toxic, I was about to order some🤯

@TheOneyouwerewarnedabout yeah I mean how many ppl would know that there is such a thing? Also, many of these diseases, syndromes, and allergies have developed in recent years because of the certain way we live. I think we would be dead because of natural selection by now if we lived when medicines were not this advanced. I'm sure I myself would be dead by the age of 5.

Unfortunately it's a fairly uncommon syndrome despite the hype. I tried selling gluten free baked products but the demand was too low to make it profitable.

@Tastyfrzz I bought gluten free muffins once from the same supplier I buy other gluten free stuff. It was pretty good and I could tell from the texture that it was made with mixed gluten free flour, but I don't know what they put in there (maybe the added flavor), that was not gluten free. Long story short, I lived the next 12 hours of my life in the bathroom that day.😐

I know some countries have wheat based diets and it’s very difficult to get away from it. I hope you find some flours that have no gluten in them and are able to buy them at an affordable price.

@WonderfulOne I’ve bought gluten-free flour mixes and some are good and some not so good especially to make bread like yeast rolls. I have also purchased a lot of different types of individual flours…tapioca (cassava), quinoa, rice flour, brown rice flour, corn meal & arepa corn meal, almond flour, potato starch, coconut flour. Sometimes I mix up muffins or banana bars with the individual flours and kind of make up my own recipes. Tapioca-cheese rolls are a favorite and are baked in muffin tins, can also use tapioca flour and coconut flour mixed to make flatbreads similar to tortillas. I also make 4 inch mini waffles and use them for bread buns for sandwiches.

@MoonlightLullaby I think part of the problem is the over-the-counter and prescription painkillers and perhaps other drugs are eroding the digestive system, and when you have thinning of the lining of the digestive system it’s easy for tiny holes to allow gluten to escape & get into the body and wreak havoc. My niece was having all kinds of pain at the age of 20 and ended up having surgery and having several inches of her intestines removed because they ballooned out and she couldn’t use the bathroom. She couldn’t eat anything with gluten in it for over a year. And she had been taking Advil painkiller for about a year before she had surgery because of other pain. I can’t even take aspirin without throwing up and that since I was a young child and other foods and drinks I am very sensitive to because they inflame my stomach and digestive system. Both my grandmothers (both born around 1895) also had problems with certain foods including fruits & vegetables that are normally very healthy such as bell peppers, red fruits, watermelon etc. So there is a genetic link most likely.

@WonderfulOne You don’t have to explain to these people who are mocking people for this, you’ve had a diagnosis and that’s good enough. And common sense tells me if I eat something that hurts me later then to avoid eating it.
