Being gluten free sucks when you live in a developing country

Nobody gives a shit. There is no gluten -free option on menus. EVERYTHING has gluten. Ppl act like it's sth you do for show-off and they think being gluten free and being vegan/vegetarian is basically the same thing. There is just two company that produce gluten-free stuff and one of them sucks, and for using the other you should be approved on a list that you have celiac. You know how many ppl are on that list where I live? 50! Only 50 ppl on that list in this city, and I live in a metropolis! Yeah, ofc you can find gluten-free products imported from other countries, but they are too expensive to live on them.
Fuck!

I’ve made potato waffles out of mashed potatoes, eggs, baking powder, salt and pepper….you can also make flatbreads out of it and other non-gluten flours.

@cherokeepatti My Mother made potato cakes with the same recipe.

She usually used left over mashed potatoes and I loved them!

I would give a million dollars to have one today.😊

@Oster1 really simple to make and you can fancy them up with parsley, green dill, green onions or other herbs.

@Oster1 Oh yes I understand that. My mother made a simple chicken casserole and she was the only person I knew that made it. I make it a few times and think of her and wish she could make it again for me.

@cherokeepatti Patti, just know that I’m feeling that now. I understand. The tears are running down my face as I write this. I’m very fortunate, thankful and grateful. To have my Mother cook another dish for me, would be the most precious want, that I have. Some may think that I have everything but I will no longer have that. It’s the simpler things in life that only mattered to me anyway. I miss my parents so much and they gave me everything. I most definitely would trade it all, to have them back. I’m sure you feel the same way, with your Mother!
