"Good luck" is a sign of pagan ritual that I have become more aware of although I recognize it is often offered as a casual albeit empty gesture to be conversational and conventional. Personally, I avoid engaging in it.

I think because it's infinitely expandable if there's more guests randomly, and takes a while so you don't get the 'waiting around til midnight' vibe

The family I came from did. It was pork and sauerkraut, usually, or if not pork, something else that went well with sauerkraut (knockwurst, kielbasa, etc...)

No but they are quite stubborn about the superstition that no poultry or fish can be eaten that day because that would take good luck away.
