I was so disappointed when I found out the red cheese was just coloured red and had no bearing on the taste. Although scientific studies have suggested colour can make us taste food differently
Depends on what is being used for... Just to eat, a French camembert, or jarlesberg, cooking an Italian parmesan or aged cheddar... So many great choices
I remember in my younger days, stopping in at an old country store along a back road in Edgefield, S.C. It was run by an old couple that always looked forward to people coming in during the day. In the center of the store was a pot-bellied stove with orange crates to sit on as you warm yourself. On the counter next to the screened door was a large block of cracker barrel cheese [i](no relation to the restaurant)[/i] and a chunk of that cheese with a thick slice of fried burnt bologna they cooked in their back room kitchen made for a great lunch.
Gourmandise Cherry cheese spread. It is only available here at Christmas time, and it is SO GOOD!

It's probably gietost & oude beemster. Gietost is really cooked, slightly caramelized goat cream. Oude beemster is an aged balanced sixty plus cheese from Holland that just kills hunger and melts nicely on hot potatoes.
Pavé d'Affinois. I had a nice wedge breathing on the table. Turned my back for just a moment and it was gone. My golden retriever was happily licking her lips. 🤣
Depends on the dish. I love Colby or cheddar sandwiches. Provolone, Mozzarella or Parmesan for different Italian dishes. Feta for salads. Queso fresco or Oaxaca with Mexican dishes.
