Corned beef hash

We have a severe weather warning and it's just started snowing. It's just the night for stodgy comfort food. My gran used to make this and everyone loves it 😊

Fry up two large onions, cover the onions with sliced corned beef and canned baked beans, then a good layer of mashed potatoes and finally, top with grated cheese.

Steak, provolone, tomatoes, french fries, and cole slaw with a fried egg on top!

@AndysAttic I've added leeks or cabbage, peppers as well as mushrooms on occasion. You can put in virtually any veg I suppose 😊

@Patientlywaiting usually cornbeef mix in one pan mash in the other then put the 2 together and whack under grill for 5 minutes

@StrictSouthernHOH I know! I love cheese. I gave it and wine up for lent this year and lost a stone and a bit in weight so my wobbly bits are mostly cheese based, which I have to say, sucks massively 🙄

So is this like, "traditional" corned beef hash or a regional/family recipe?

I've heard people talk about it a lot but I've never actually seen it, tried it or looked it up... I literally thought it was chopped up corned beef and nothing else 😅

Such an English dish that one. Love it, except I am not big on corned beef. For me it’s just stringy, bad meat. Each to their own. I’d be happy to have a vege version. 😉

@Raymuundo this is the only dish I would eat corned beef in. I don't know what you could substitute it with to make it vegetarian, maybe a nice vegetarian sausage. I often use Linda McCartney red onion and Rosemary sausages in casseroles etc, maybe they would work in this.
