what do you do when you add "too much salt" while cooking ?

Neither.
I add a grated apple, or a potato or cream, (ometimes lemon juice or vinegar)
Its amazing how much it helps.

Or in last chance scenarios, i go thru all the senses of taste:
sweet., sour , umami, and bitterness (and salt, but forget that ), and i add essences of all them to counteract the salt .

Sometimes if you end up with a dish that is too intense in flavour, serve it with rice or pasta .

I never add salt to cooking.

In your case add sugar turn it into sweet and sour.
@KiwiBird This is the rule most of us veteran cooks have learned after too many "whoops" accidents learned the hard way. Let whoever is going to partake of your efforts "SALT TO TASTE" once your part is done.

Acid helps a lot. Maybe something like lemon juice or vinegar or certain sauces could take some of the edge off from the saltiness of it, but it's only useful up to a point. There's a level of saltiness that there's no coming back from

You can add potatoes to a soup that is oversalted, and they will absorb some of the salt, and can then be removed.

You could also dilute the soup or stew, but that does affect the flavor. Salt should only be added a pinch at a time...because it can not be removed.

Add water and simmer for a while til it thickens back up

(Depending on what it is)

Or add more of the ingredients that are acidic
