Home made perogies!

I made homemade perogies with potato and smokey cheddar filing. There was also this Polish farmer's cheese. It was fun to slow down and make them.

I used to help my husband’s aunt make perogies from scratch. She used to make sauerkraut, potato, cheese and prune perogies. Good memories and they were amazing!

I have a memory of my mom and grandma trying to make them one Easter in my youth. They were struggling with the dough and arguing enough about it they kicked me out of the kitchen and I've been afraid to even ever try making them myself in my adulthood.

@meggie yes I only had them on a baking tray to freeze, you boil them .

@FreddieUK Yes I made mashed potatoes with the cheese first and scooped it into each.

@nonsensiclesnail They were pretty damn good for my first attempt, I didn't roll out the dough thin enough, but it's a learning curve.

Dough

4 1/2 cups of flour
2 cups of sour cream
2 tpsp of salt
2 tbsp of oil
2 tbsp of melted butter
2 eggs
1 egg yolk

Add and mix wet ingredients in one bowl, dry ingredients in another and add wet ingredients to the dry ingredients until it forms into a dough
Let rest for 20 min
Roll out dough to 1/8" and use a glass to cut circles.

Filling

Start with mashed POTATOES and add whatever you want.

Scoop the mashed potatoes into the circles
wet the edges of the circles so the stick when you fold the dough

Let freeze

Plop them in boiling water. They are done when they float

@JimboSaturn I remember my mum used to make a similar version of that with only cheese. Point is, you don’t need potatoes to have a delicious meal! 🥔🤷🏽‍♀

My grandmother lives across a church that made the best homemade perogies and steel them out the back on weekends. The quark and sauerkraut potato fired with onions were my favorite ones.

Those look fire at.
I didn't know you could bake pierogies.
