I swallow a lot of food whole, food seems to digest in my throat for some reason like it’s on fire or something

No: I rely on instinct!
We should not swallow food whole, but the notion of counting bites is NOT new. It was current a century and more ago, along with other health fads later realised to be rather meaningless.
"According to most experts" does not really mean much either. How many experts in what field, publishing where; and summarised where?

Chewing brings out more of the flavour so that's a good reason as well. If it's something I don't like, I try to dispatch it down my gullet more swiftly without choking.

When I was about 13 I learned a wonderful new word for chewing. "Masticate." That evening at the dinner table I told my sister to "masterbate your food well." I knew when I said it that it wasn't what I meant to say. Then I realized what I had said.

I don't chew thoroughly, but I also don't just swallow it either.
I eat slow.
