I love aubergine and tomatoes 😋

Combine them and it’s a match made in heaven…don’t forget the garlic bread toasts. Nom nom 😋

Oh my !!! Look at that…. Looks delicious…. Add a little bit of garlic powder and then …..

I usually fry aubergine, then zucchini, and then a bit of mince meet with onions… later will put them on sliced tomato covered with garlic powder and a bit of seasoning, let it steam on a very low heat for 15 minutes and Voila!!! You can have it with steamed rice or on toast …
Oh yes…garlic goes so well with eggplant, isn’t it Sis? 😍🤗

Hey my sweetest sister ….

I love love to learn a lot from you in the kitchen and to eat all those delicious food that you cook… we will do that one day… it’s a deal….

Recipe for four people:

Pealed and sliced Eggplant: 6

Pealed and sliced zucchini : 8

Sliced tomato : 5 (large)

Mince meat : 400 gr.

Shredded Onion : 1 (medium)

Garlic powder: 2 table spoon

turmeric : 1 table spoon

Seasoning : as you wish

Sesame oil: a cup

1. Fry eggplant, zucchini separately …

2. Mix the mince meat and onion be for frying it … and fry in low heat while adding your turmeric and some seasoning to it

3. Cover a separate frying pan with your sliced tomato’s and cover it with garlic powder and a bit of seasoning, add the fried eggplant, zucchini and mine meat on top of the tomato’s ( each in their own space .. in other words, don’t mix them together) …. Leave it on a very low heat for 15 to 20 minutes and let the tomato juice and garlic powder be added to everything in the pan…

Voila!!!

Serve either with steamed rice, or on large slices of briefly toasted bread …

I buy eggplant (aubergine) about once a week. Usually I just sauté it with bell peppers. Sometimes I bread it and fry it. And sometimes I make it the main entrée in the form of eggplant parmigiana!

Tomatoes sound like an interesting variation! I will try that.
They are meaty and healthy…I love them for their versatility. Even add them to dals and mash them after roasting to prepare Bharta.

@Vivaci mmm that looks good. Yes they are very healthy. My daughter had 3 autoimmune problems as a teen. When she would start suddenly craving a food she had no interest in before I would research as much as I could to find out the healing properties. I got a coupon on the back of a cash register receipt for a free eggplant at a grocery store. So I got the eggplant and cooked it & she loved it. She was cooking 3 big eggplant every week…she found a Chinese recipe for stewed eggplant. And we had it cooked other ways too. I knew it had some kind of healing property. Checked all the books that I had and couldn’t find out what healing it had for her. Went to the library and scoured through nutrition and health books. Found one that said eggplant has a chemical in it good for the brain & seizures. She had developed a seizure disorder when she was 12 and this was a couple years later that she was wanting to eat it nearly every day.

All I know is that it’s rich in iron, and I have iron deficiency, so it helps.

A local Italian place has small lightly breaded bits of egg plant as an available pizza topping, the best egg plant parm I've had, and a side something like this. Its the only time I get it as no one else in my house cares for it no matter how its prepared.
@Stillwaiting Sounds delicious 😋 That’s authentic Italian pizza….it’s v common to put eggplant slices on pizza in Italy.

I know not many people like eggplant…lol…such a pity, right? It’s so easy to prepare and tastes better than chicken.

I make a Persian chicken stew called Bademjan and it has chicken, eggplants, & tomatoes in it…very good with saffron rice. I have also had Syrian eggplant stew and it was good.

My mom makes this and I can’t get enough . It’s so good. She adds peppers to it as well.

Appears like a slice of heaven. Reading below, it's veggie.... but I'm guessing beef would work in this dish. It's surprising how much colouring, in food groups, gives to the flavours and spice of a dish. Oh ideas, thank you.
It goes well with beef too…especially if you’re stir frying it. Just make sure you add the aubergine when the beef is partially cooked. Add olive oil generously whilst cookin… @thewindupbirdchronicles

Aubergine….I had to google. Then I realized thats eggplant.

My mom made that sometimes. It was delicious…but she would make a tonne of it and we would have to eat it for days.

@Vivaci I used virgin olive oil... The quality stuff.
They were lightly browned but I think just flavourless
@Mellowgirl noooo…don’t cook in extra virgin olive oil…it won’t taste good. Use pomace-olive oil or regular cooking oil for that.

And add some red onions and garlic to hot oil, then after they’re translucent, you add the cubed eggplants and chopped tomatoes. Add salt and spices. Cover and let it simmer for 15 mins. Mix in between.
