I need to learn how to pick them better and how to cook them last time my meal was a little flavourless.
You’re right about that….the secret to cooking a good eggplant dish is to use a generous amount of peanut/olive oil. 😉 @Mellowgirl

@Vivaci I used virgin olive oil... The quality stuff.
They were lightly browned but I think just flavourless
@Mellowgirl noooo…don’t cook in extra virgin olive oil…it won’t taste good. Use pomace-olive oil or regular cooking oil for that.

And add some red onions and garlic to hot oil, then after they’re translucent, you add the cubed eggplants and chopped tomatoes. Add salt and spices. Cover and let it simmer for 15 mins. Mix in between.
