I buy eggplant (aubergine) about once a week. Usually I just sauté it with bell peppers. Sometimes I bread it and fry it. And sometimes I make it the main entrée in the form of eggplant parmigiana!

@DrWatson I like to slice it thin & brown it with a little olive oil and then make an omelette out of it for dinner.

@DrWatson Me too! It’s my favorite vegetable, Dr. Yummm…eggplant parmigiana is a perfecto recipe.

Here’s another easy recipe…
Try slicing eggplant and tomatoes in equal thickness. On a baking tray, place the eggplant first, then the tomato slice on top, sprinkle salt and pepper in between and on top and now place a slice of fresh mozzarella cheese on top.
Bake at 275 for 10-14 mins. Garnish with basil, freshly ground pepper n serve

@Vivaci I think it’s my favorite one now. Substantial meal too. I also like to slice eggplant thin and brush with olive oil, salt & pepper and cook it on a grill, love it that way.
They are meaty and healthy…I love them for their versatility. Even add them to dals and mash them after roasting to prepare Bharta.

@Vivaci mmm that looks good. Yes they are very healthy. My daughter had 3 autoimmune problems as a teen. When she would start suddenly craving a food she had no interest in before I would research as much as I could to find out the healing properties. I got a coupon on the back of a cash register receipt for a free eggplant at a grocery store. So I got the eggplant and cooked it & she loved it. She was cooking 3 big eggplant every week…she found a Chinese recipe for stewed eggplant. And we had it cooked other ways too. I knew it had some kind of healing property. Checked all the books that I had and couldn’t find out what healing it had for her. Went to the library and scoured through nutrition and health books. Found one that said eggplant has a chemical in it good for the brain & seizures. She had developed a seizure disorder when she was 12 and this was a couple years later that she was wanting to eat it nearly every day.

All I know is that it’s rich in iron, and I have iron deficiency, so it helps.
