Appears like a slice of heaven. Reading below, it's veggie.... but I'm guessing beef would work in this dish. It's surprising how much colouring, in food groups, gives to the flavours and spice of a dish. Oh ideas, thank you.

It goes well with beef too…especially if you’re stir frying it. Just make sure you add the aubergine when the beef is partially cooked. Add olive oil generously whilst cookin… @SW-User
