I need a really good mac n cheese recipe.

A good roux. It makes the cheese sauce creamy.

For the post you commented on, I merged two of my favorite recipes. But this one is the one I use the most and it tastes very similar to Stouffer’s Mac n cheese.

I double the salt and pepper and never use velveeta.

I don’t follow any recipe but I start with the roux (butter, flour, milk) and melt in all kinds of shredded cheeses (usually whatever I have on hand) cheddar, mozzarella, edamame, provolone, cream cheese…top with more cheese and a layer of breadcrumbs and/or crushed Tostitos/potato chips/panko crumbs, again, whatever I have on hand.

I always add a bit of smoked paprika AND I like to put it on the smoker instead of in the oven. 😉

The best Mac n cheese you’ll ever make, is the one by the young chef Tini. Look her up on TikTok she has her recipe pinned down. It is the best one I’ve ever had and EVERYONE loves it when I make it. She breaks down the process for you step by step on that video, pretty easy to make too.
Follow the directions and add some milk in the mix.

And maybe sprinkle in a different type of cheese on top, and/or some pieces of meat (lie bacon or ham) in.
@sstronaut I like to dice an 8oz boneless pork loin, brown it, finish it with bbq sauce, then add it to the mac and cheese.

My secret is i buy the luxury mac in a box, the cheese sauce is already creamy, and it's ready in 7 minutes, after waiting 15 for the water to boil obviously

@Sojournersoul I think I only bought it once in my life and it was for a dip recipe. He does have a milk allergy! So I try not to eat dairy. The mac in cheese is going to have to wait 🙄 I just had some fudge and Santa chocolate today and his poopers went green. Drove me nuts at first didn't know what was going on with him! Here's your tmi for the day lol.

Americans eat a lot of that stuff eh?. Everytime I’m looking at recipes online everything is Mac n cheese. Is it popular in the entire country or only in the south? Do you know how it became popular? Just curious about it
@Jenny1234 Even though some do try to claim it's southern and ethnic to a certain race, the dead televangelist Pat Robertson created a massive scandal some recent years ago, it's universal, and even Canadians have expressed their obsession for Kraft Dinner.

You mix together a combination of at least two varieties of cheese, along with a block of cream cheese after you have added the milk to the roux and blended it in. Options are sharp cheddar, smoked gouda, jalapeno jack, and texas longhorn cheese.

I use three cheeses, smoked Gouda and aged cheddar for the sauce, grated grana podano for the crunchy topping.

@Spoiledbrat Chef JP loves his cheeses big time :) I have been watching his twice weekly videos since he started after the pandemic kicked off, he had less than 2,000 followers at that time, now he has over 1.6 million at almost four years later.
