While some people avoid yolks in order to consume less cholesterol, I never thought of that practice as being so common as to describe an "era."

On second thought, this might depend on where you live. Maybe Californians are bigger on this than say, people in Alabama who eat collard greens cooked in bacon grease!

Must have been in a high class restaurant. Eggs are too expensive as is still to do the separation in a average restaurant. They would simply lose money on the separation.

Worked at four star restaurant back in the 80s. Still hadn't seen one.
It’s something that only happened in the US, due to a misunderstanding (deliberate? Ignorance?) about dietary versus blood cholesterol.

Luckily in Europe we were more sensible.

HINT: eating cholesterol doesn’t affect your blood cholesterol.

My granny used to separate the whites and yolks. Beat the whites until they were stiff and then quickly stir in the beaten yolks and her omelettes were the fluffiest I've ever eaten.
Might be on the way out as a menu item. I wonder what the places that make cartons of egg whites do with all the yolks

Not for folks with dietary issues. I just eat fewer eggs. When I do have one, I want a [b]whole[/b] one. 🍳🥚

@Azlotto I've never had one but i like to put an egg in my breakfast ramen and it often separates. I hate eating the slimy white part. I can't imagine eating a whole omelet like that. I haven't read or heard anything about egg-white omelets in many years.
