Corned beef hash

This is another dish that goes down well in my family, I love making bakes that you can prepare ahead and then clean round whilst they are cooking.

In this I fry off some onions, then add a layer of tinned corned beef, then top with tinned baked beans.

Next cover with mashed potatoes (you can hide extra veg in the mash too, they will never know!) top with grated cheese and some sliced tomatoes and/or mixed herbs then bake until the cheese has turned golden brown.

We have this with salad or oven baked tomatoes with a bit of balsamic vinegar.

I am getting a handle on this kind of cooking now. But its summer here. You are on my winter list.. The tray bakes and slow cooker meals are so much more nutritious and frankly, not that hard..😷

Delicious and it's the sort of meal that can be experimented with, for example pasta instead of potatoes and tinned tomatoes instead of beans.

I like to make a shepherd's pie with corned beef. Plenty of cheese on top.

I never did like Corned Beef.
My grandmother would serve it at least once a week when I was a child. Always covered in a bland white sauce.

@Gusman maybe you'd like it a different way. I think white sauce on corned beef is very strange

@PatientlyWaiting25 I have been put off Corned Beef for life.
Is it still so salty?
I supposed being cured in brine it will always be salty.
Food fit for pirates. 🤪

@Gusman mixed with the other ingredients, it doesn't taste salt. Baked beans are quite sweet so there's balance.
Looks good. Though corned beef hash is usually with potatoes or some other root veggie.
@jackjones68 oh yeah you guys are in the UK. Here in the US it's usually potatoes cooked in a skillet with onions and corned beef served with eggs on top. I believe the earliest one here was with beets instead of potatoes. But hey we call biscuits cookies and scones biscuits. Lol

@PatientlyWaiting25 potatoes, onions and carrots. Corned beef and stock. With the most important ingredient brown sauce
It was always a cheap, filling meal served with bread.

@JonLosAngeles66 If we make a stew,we would add dumplings. I guess similar to your biscuits

I’ve never had that before

@SJones48 try it, very tasty 😋

@PatientlyWaiting25 I’m not much of a cook but I’ll try it sometime

I`d love this, but my wife won`t eat beans.
