I've done this a few times lately. It makes me sad because it's not really that they have changed for the worse or anything. They are still quality content makers. I just maybe lose interest in the type of content they put out. When I realize I never watch their stuff anymore and have no real desire to anymore I unsubscribe.

Got bored with it. Besides, if I am familiar with a channel, I do not need to subscribe in order to find them.
And expanding on what @Royricky09 said, I have seen that on a couple channels, although to a bigger degree.
One was some lady giving French language lessons, but then started talking politics in her videos. Of course this same youtuber is getting desperate so is trying ANY trick possible to gain subs and views.
But yeah, everyone is jumping on the politics bandwagon right now it seems.

It's very rare I subscribe in the first place and if then I make sure it's someone who doesn't release videos very frequently or I turn off notifications. Who needs to subscribe when the algorithm shows videos of the channel you watch often in your feed anyway?

That's extremely rare for me. When some subscribed to you, I'm subscribed for life unless you say or do something so objectively awful that I cannot in good conscience continue to be associated with you.
