What does one do when they accidentally find out their ex-boyfriend is gay??

He's your ex. No more need to even think about it. He must have seen something in you that he liked. Just because he is gay, doesn't mean he can't like women.

There is no reason for you to feel like a fool. Apparently they all went to a lot of trouble to keep you in the dark. Be grateful that you didn't marry him and then find out. No reason you can't still be friends with him if you ended on a good note and not nasty.
