Do you ever have apps just disappear off your phone?

Nope it should not happen, unless those were factory installed apps that may get removed when you update the phone software.
If it is android, you can go to app store and check the history.
Also scan your phone for viruses.
If someone else uses your phone, you might want to check if they removed something

I think a lot of phones simply disable apps you don't use these days. Like if you haven't used it in say a month it will vanish from the home page.

You can set individual apps so they won't be disabled though but I suspect it will be something along that line x

All dating apps are gone from my phone because I disappeared them.

I use Android not Ios and my Android phone gives me total 100 percent control over app installing and deleting.

Nope or at least I don’t think so. It might be because I still use a dumb phone and don’t use the few apps that it came with .
