How does a stranger who steals someone's phone in public get their Passkey and Internet Banking password?

I woke up to a stupid update on my phoneNow everything looks different. I hate it. Why do they do this? Just change everything and think that everyone should just be okay with it. I could swipe down to turn my ringer off/on and thats not even there anymore 🙄
