@Fishy there absolutely would be variations among horseshoe crabs, but apparently none of them were an advantage and therefore weren't passed on widely. And all other species keep changing because it's a very slow process towards improvement and we've not yet reached perfection yet.
If it ain't broke, don't fix it. 🤷

Evolution happens with pressure, crabs have already achieved the perfect form: you've got an armor, you've got a pinch, and you can spend the day biting the ass of tourists on the beach. What else do they need??
