Genuine, but also probably stupid, question about evolution: but why haven't some species evolved? Eg, horseshoe crab?

Evolution happens with pressure, crabs have already achieved the perfect form: you've got an armor, you've got a pinch, and you can spend the day biting the ass of tourists on the beach. What else do they need??
