Sugar Free, Gluten Free Pumpkin Apple Custard



This is made mostly in the blender...fairly easy!

Spray a 14 x 10 baking pan (one with a cover), with non stick baking spray. Place pan on a large baking sheet with a rim, to which you have added about 1 1/2 cups of water.

Preheat oven to 350F.

2 (15 1/2 oz) cans of no sugar added pie apples, carefully rinsed to remove the "apple pie filling stuff"
1 cup chopped walnuts

1 (15 1/2 oz) can pumpkin
3 cups milk
12 eggs
2 tsp vanilla
2 Tbsp pumpkin pie spice
1 heaping cup Splenda sugar substitute

Place the rinsed apple slices on the bottom of the pan, and add walnuts evenly over the top.

Mix the remaining ingredients in your blender. If the blender isn't big enough, blend the parts of the recipe that will fit in there, minus the milk, and then mix the milk and the blended ingredients together in a very large mixing bowl.

Pour the contents of the blender and/or the bowl directly onto the apples and walnuts. Lift carefully into the oven without spilling the water.

Bake for 60 minutes.

8 to 12 servings.

It's been a long time since I ate fresh apple pie with icecream. It's soooo dang YUMMY!...🤤..lol

@Musicman It tastes sort of like pumpkin pie without a crust, and with apples added to it and walnuts. I had a piece for breakfast this morning! 1 1/2 eggs, milk, veggies, fruit, and nuts! Couldn't be healthier!

No lactose for me, probably would use almond milk, it's the most palatable.

I want real apples, I don't think I have seen sugarless canned pie apples.

@LunadelobosIAMTHEDRAGON I've actually been doing the same custard with real apples, and not peeling them. There's only so much I can do with the tendonitis in both wrists now. But I baked the apples in foil for 45 minutes coated with BOTH cinnamon and pumpkin pie spice. Apples release a lot of liquid at times. That has to be drained.I used 8 to 10 apples, various types and sizes.

I can relate. It's exhausting too.
I ate some delicious werthers candies yesterday. Big mistake. 🙄...lol

I think I should start drying my own fruit and some veggies.
I have a food dehydrator: I hope it still works. Bought it a while back, but haven't used it.

I miss many foods...Do you?

@LunadelobosIAMTHEDRAGON I miss being able to just EAT things without having to say to myself, "Does this contain flour? Does this have potato starch in it? Does this have rice in it? What the hell is Sucralose? Is it sugar?" If I had made this custard before, I would have given it a graham cracker crust. Now that's a no no. 😔

@TheOneyouwerewarnedabout Wow! I didn't, either! Had to look it up just now. Says the pulp of the fruit is brown and very soft, and it is most suitable for making jellies. ☺️
