Minced beef chilli with cannellini beans and stupidly hot chilli paste.

Chop a big onion, a big carrot and some celery into small pieces. You need roughly the same amount of each.
Get them frying in a big pan on a medium heat. Add a fresh bay leaf (or two dried ones).
Also add a good pinch of cumin seeds and as many whole dried chilli peppers as you think will be tasty.
Put some music on and dance around the room for a few minutes.
When the veg is softened put in the minced beef and four finely chopped cloves of garlic.
Turn the heat up and brown the mince and veg for as long as possible.
Then add one teaspoon of coriander (cilantro) powder and one tablespoon of hot smoked paprika.
Stir to cook the spices.
Add a big squirt of tomato paste. And a pinch of fresh thyme and dried oregano.
Stir.
Dance
Add a tin of chopped tomatoes. And half a tin of hot water.
Add the stock cubes or a teaspoon of salt.
Bring to to the boil. Turn the heat down to low. Put the lid on and dance to the radio for 45 minutes.
Taste it and season to if necessary.
It shouldn't need sugar because of the carrots.
Then boil it hard for a minute or two. Nobody likes a watery sauce. :)
And serve whilst dancing...

Mum made a recipe called left over pie yesterday from Sunday’s roast lamb, there was so much lamb left over on the bone that she made two left over pies. It’s got potato over it like cottage pie. A recipe taken from the internet. So I had that with vegetables, gravy and lots of pepper.

@ArtieKat I haven’t had many variations of fish, so it tastes like regular ole fish to me. Except bathed in butter.
