What's everyone eating today?

Now that Easter is over are you getting back to normal?
Chilli-braised pork shoulder steak with butter beans and red onions; spicy butternut squash wedges and roast parsnips
SW-User
that is a nutrient-dense meal that probably tastes very amazing 😋

we're gonna have braised pork ribs, rice pilaf and ghee-glazed baby carrots with chopped parsley

@SW-User Yours sounds good too!

Minced beef chilli with cannellini beans and stupidly hot chilli paste.

It would bring anybody back from the grave. :)
Thodsis · 51-55, M
@ArtieKat Excellent. It might take me a few minutes.
Thodsis · 51-55, M
Chop a big onion, a big carrot and some celery into small pieces. You need roughly the same amount of each.

Get them frying in a big pan on a medium heat. Add a fresh bay leaf (or two dried ones).

Also add a good pinch of cumin seeds and as many whole dried chilli peppers as you think will be tasty.

Put some music on and dance around the room for a few minutes.

When the veg is softened put in the minced beef and four finely chopped cloves of garlic.

Turn the heat up and brown the mince and veg for as long as possible.

Then add one teaspoon of coriander (cilantro) powder and one tablespoon of hot smoked paprika.

Stir to cook the spices.

Add a big squirt of tomato paste. And a pinch of fresh thyme and dried oregano.

Stir.

Dance

Add a tin of chopped tomatoes. And half a tin of hot water.

Add the stock cubes or a teaspoon of salt.

Bring to to the boil. Turn the heat down to low. Put the lid on and dance to the radio for 45 minutes.

Taste it and season to if necessary.

It shouldn't need sugar because of the carrots.

Then boil it hard for a minute or two. Nobody likes a watery sauce. :)

And serve whilst dancing...

@Thodsis Interesting!
Mum made a recipe called left over pie yesterday from Sunday’s roast lamb, there was so much lamb left over on the bone that she made two left over pies. It’s got potato over it like cottage pie. A recipe taken from the internet. So I had that with vegetables, gravy and lots of pepper.

@Gingerbreadspice
It’s got potato over it like cottage pie
Lamb done like that constitutes a Shepherd's Pie - one of my favourites!
@ArtieKat Yeah was a special recipe and without the vegetables in it.

@Gingerbreadspice Sounds good!

Just had a very good Indian buffet.
Thevy29 · 41-45, M
Left over Spaghetti bolognaise mince. I was going to make a Sheperds pie with wit but just cooked some chips and put that onto instead.
ArtieKat · M
@Thevy29 I know I shouldn't get so upset by the name of a dish but it drives me effing demented to see Cottage Pie - made with minced beef and mashed potato - referred to as SHEPHERD'S Pie. The clue is in the name, that it's made with lamb or mutton not beef
Thevy29 · 41-45, M
@ArtieKat Potatoe, Potato. It was tasty nonetheless.
PerfectionOfTheHeart · 46-50, F
Goodness gracious 🤤. Grilled tilapia is on the menu tonight, with some cilantro lime rice and corn on the cob.
ArtieKat · M
@PerfectionOfTheHeart I don't think I've ever had tilapia - does it resemble any other fish?
PerfectionOfTheHeart · 46-50, F
@ArtieKat I haven’t had many variations of fish, so it tastes like regular ole fish to me. Except bathed in butter.
I made a Japanese curry chicken stew, to be served over rice of course
ArtieKat · M
@Ghostinthemachine Sounds good!
@ArtieKat it’s a comfort food

Yours looks good too!
SunshineGirl · 36-40, F
I got to take home most of the leftovers from Sunday. We will have shepherds pie tomorrow 🐑
ArtieKat · M
@SunshineGirl I do like Shepherd's pie!
OliRos · 18-21, F
Tonight, soup, courtesy of Marks & Spencer's Food Hall - Mexican Chilli Bean - and a ciabatta roll, same source.
TheLush · 26-30, F
I had pan fried sea bass with sauted potatoes and asparagus for supper.
ArtieKat · M
@TheLush Sounds good!
I imagine that is delicious!!

2 biscotti and scrambled eggs with sour cream in them.
ArtieKat · M
@nonsensiclesnail Thank you - mine was!
Crazywaterspring · 61-69, M
I'm finishing off Easter's brisket.
ArtieKat · M
