What is everyone making for dinner?

I had some odd craving for sausage and peppers because I was having flashbacks of the San Gennaro festival I guess haha. But I can't eat basic sausage so I had to clean it up and use chicken. Three colors of peppers and onions and garlic and deglazed with Pinot noir. Let's see if Prunella likes it. 😁

Leftover chicken salad I added some things to, along with a soup (leftover too) and made these fresh (why I always make sure to have tomatoes, peppers and herbs in the garden)

Pasta made up a tomato sauce with a chopped shallot, minced garlic bits, dried Basil, some leftover tinned tomato and chopped up vine tomatoes. Yummy

@Royrogers It was all very good. The creamed spinach probably should have baked for a half hour more, because it was a bit undercooked, but the flavor was lovely!
