Sometimes I do that. It depends on what I'm cooking with. Some spices are easy to work with. Others I measure out but not to a t or anything. I don't measure salt and pepper.

From a chef, that's the difference between cooking and baking. You cook with your taste buds but baking is science. Don't take slot to go wrong with baking

For cooking at home I never measure anything (except in baking) but when I was producing ready-meals and bulk food for cafes I had to maintain consistency.

I do it with some ingredients and then develop a habit. And then I open a new bottle of oyster sauce and splash two spoons of it without tasting how salty it is first. 🙈 Well, I'll do next time.
