I start them from the fridge in cold water, bring to boil cook for 4-5 minutes. Put right away in cold water for a couple minutes. They come out of the shell easy

after boiling them hard put them in cold water for 15 minutes, take them out, tap them gently on a hard surface until the shell is cracked all over, they are then ready to be pealed

Or even use the back of a tablespoon to gently tap it all over to crack the shell.

While cooking i fill a bowl with/.water, place in the freezer.
Remove eggs from boiled water and place in the bowl in freezer. Give them about 10 minutes
Remove, tap both ends on hard surface, place on its side, gently but slightly firmly , roll. The shell should come off easily. Good luck.

The cooking process is not as important as the age of the eggs. Older eggs do not adhere to the shell as much as fresh eggs.

@Myocite Yep. I don't use that many eggs any way, so when I get fresh eggs I boil whatever I have remaining.

Do you immediately submerge them in ice water and peel them after like 1 minute? I find waiting too long to peel them causes that issues

I steam them but make a small hole on the large end first. steam them for ten minutes I put them into cold water. They seem to shell easier.
