How do you know if someone's feelings are genuine?

Depth and complexity: Genuine emotions often exhibit depth and complexity. They are not superficial or overly simplistic. People with genuine emotions tend to have a more nuanced understanding and experience of their feelings.

It doesn't matter if they are, because feelings change with time so the real question is do you feel like playing Russian roulette

It's hard to ever know

It's easier to judge if a person is sincere by watching how they act to others, especially those they have no particular reason to be nice to

If they seem sincere and caring in the worst of scenarios, their feelings are probably genuine

If not, they're probably full of it on that too

Someones actions speak louder than their words. I notice a lot of answers are about feelings not lasting so it doesn't matter. Things always evolve and change including feelings. If feelings aren't lasting there was probably an indicator early on, and that is how someone behaves, someone can only pretend for so long.

They will "walk the walk" and not simply "talk the talk". In other words, don't rely on what they say, rely on what they do. Too, genuine often comes with a shelf life.

People show their true colors when they think people aren't looking.

Most of the time.

You can find all their dirt in the dark.

The thing is though,everyone has past and people can change.

It's usually pretty clear to me intuitively, unless I'm part of the equation.

My suggestion would be to consult an outside observer.

If it's congruent with their actions.

You don't. All you can do is assess their actions.

Personally, I don't trust anyone's words as genuine. I just assume everyone is lying.

Questioning under torture I suppose.

You should feel it in your heart and mind both, but always be cautious as narcissists can fool the best of us. Most often do not get involved with those that worry more about themselves and you will be good.
