My nana is simply the best

I’ve been struggling since becoming insulin resistant. I was in hospital last week because my blood sugars just wouldn’t stabilise.

My nana loves baking and has always loved baking me my favourite cakes.

She has been doing research and baked me some keto (practically zero carb) desserts.

She made fruit cake

Coconut and mixed nut snowballs

And berry and nut chocolate mousse

She also made cheese scones and she’s working on keto bread. She is simply the best and I’m forever grateful because it is definitely helping me to feel normal

💛 I was wondering where you were. Hope you're doing better. It all looks delicious 💛
SW-User
@HannahSky I’m lucky she’s such a good baker
What does that mean Sophie, can they sort this out for you?

Your nana is the best❤❤
@SW-User oh that's so tough, they're my favourite thing s to eat too
ArtieKat · M
@AbsolutelyFabulous Mine too - I had to completely rethink my diet when I was diagnosed back in 2017
@ArtieKat that's tough😔
God Bless Nana! 🤗
I had an aunt Nana, she was the best cook in the world. Lots of love in that food.

Aww sorry, I know how difficult it can be to stabilize sugars. My sister is type 1 diabetic. Unfortunately she has neuropathy that is awful in her feet now. Are you type 1 or 2? Those treats look awesome! My sister bakes breads or cookies with almond flour so it cuts the carbs down a lot.
SW-User
@Coralmist I’m type 1, that’s what my nana used.

George needs his portion too
SW-User
@deadgerbil he gets fresh berries every day, he can’t have cake though

The grapes in the mousse shocks me but it all looks so good and that's so nice 🩷😭
Notsimilarreally · 31-35, F
@SW-User because I would never eat grapes with chocolate and I don't think I've even seen it before lol
SW-User
@Notsimilarreally you should, they’re yummy
Notsimilarreally · 31-35, F
@SW-User I totally would try it. Now I want chocolate.

My wife has substituted Stevia for sugar (in lesser quantities) while baking cookies and cakes for me for years now. It loses some of the crispness the sugar provides, such as to pound cake, but isn't bad at all.
RSquared · 61-69, M
@SW-User My wife never went zero carb for me. Just reduced.
SW-User
@RSquared this isn’t choice, I’m not allowed carb (much carb anyway) so trying different options to give me at least some variety of food that’s not just protein and vegetables
RSquared · 61-69, M
@SW-User I know it's so hard. Good luck!
