My nana is simply the best

I’ve been struggling since becoming insulin resistant. I was in hospital last week because my blood sugars just wouldn’t stabilise.

My nana loves baking and has always loved baking me my favourite cakes.

She has been doing research and baked me some keto (practically zero carb) desserts.

She made fruit cake

Coconut and mixed nut snowballs

And berry and nut chocolate mousse

She also made cheese scones and she’s working on keto bread. She is simply the best and I’m forever grateful because it is definitely helping me to feel normal

My wife has substituted Stevia for sugar (in lesser quantities) while baking cookies and cakes for me for years now. It loses some of the crispness the sugar provides, such as to pound cake, but isn't bad at all.

@RSquared it’s not just the sugar, I can’t have the flour either. Replacing sugar is nothing

@SW-User My wife never went zero carb for me. Just reduced.

@RSquared this isn’t choice, I’m not allowed carb (much carb anyway) so trying different options to give me at least some variety of food that’s not just protein and vegetables
