It's a necessity to survive long periodes of time in the desert wasteland that is Dune.
Water on Dune, is perceived as the most valuable resource of the planet... while outside of the planet "Spice" is the most valuable resource too the galaxy.

@Kwek00 I think I've read somewhere that Lynch in person said they invested most of the time / budget on the first half, and the second part of the movie was rushed. I liked Villeneuve's more (first of all the movie felt more serious overall), although Part I covers less plot than Lynch's

@Elessar Villeneuve in part I just makes a choice... and he chooses to focus on Jessica and Paul and focus on the theme of the messiah figure. In part II, he does pretty much the same thing.
I said this somewhere Else... Villeneuve is a more shallow version of a really deep and complicated book. And Villeneuve takes the time to fill up the gaps between chapters, where the fighting takes place, with incredible beautifull action scenes. Frank Herbert, wasn't so focussed on the action... he focusses a lot more about the ideas behind his story.
Lynch... just adds stuff that shouldn't be there and ends up missing the point completely imo.
