how should you deal with people who play 'head games'

It depends on the game. My Mom is very passive-aggressive. I deliberately "misunderstand" her intention, take what she says at face value, and act accordingly.
My ex was a liar and a cheater. I removed myself from that game entirely.

Cut them out of your life. Change your phone number. Move. People who play head games are toxic.

Talk less.. Think more.
Cutting off ties would be best.
