Oh I love cheese.
All depends on what I'm in the mood for.

There are loads with subtle flavour Brie; Camembert; Cheshire; Wensleydale etc.
There are some with a moderately harder; sweeter flavour.
And something like Cheddar has many different grades of strength depending on how strong you like the flavour

I'm very bad at favourites but right now a really good gruyere comes to mind right now. I just like cheese though. Gimme the worst cheese on earth and I will love it. I just love the best cheese even more lol

Smoked Gouda, Gorgonzola, Camembert. They are pretty different from each other. I like lots of cheeses.

Tastewise, American cheddar or Parmesan/Pecorino
