		@Eyeinthesky  ginger is a natural painkiller and anti-inflammatory and also a blood-thinner just like aspirin. Need to be careful with the candied ginger because it’s very easy to over-indulge it’s that good. You could thin your blood too much & have a bleeding brain stroke. 		@SW-User I have chopped it up and put it in fruit salad. Also thought it would be good chopped and put on white icing on a pineapple cake.  And candied ginger would pair up good with pineapple in a fruit salad or in yogurt.

		@SW-User You can find candied ginger at Winco in the bulk bins if you have one nearby. The price is not too much and you can buy as little as you want to try it out. I think they have dehydrated pineapple as well, they offer several dry fruits in those bins.
