I food prepped for the week (work lunches)

I made a ton of cheesy bean, beef (plant based), and rice burritos and popped them in the freezer so I can grab one for lunch each day, and I made a big bowl of pasta salad for the same reason. It makes my mornings so much easier.

I also made a big pot of veggie beef soup (plant based) and put one container of that in the fridge, and froze the rest. Unfortunately with rising food prices, it's gonna be like this for a while in our house- making cheap but healthy meals, eating one serving for dinner that night and freezing the rest for later use.

We eat a lot of salads, fish filets (frozen salmon or tuna steaks), and rice or pasta, too. Healthy, easy, and aside from the fish, pretty cheap. For lunches, bf usually packs his own pre-made burritos (with actual meat) or tuna salad with crackers.

Sounds really healthy and economically balanced. I've also changed the way I eat lately due to my health and rising cost of food. Eating less meat, more veggies and better balanced portions.

I want you back on the soup 🍲 diet.
Two soft boiled eggs with wholemeal toast soldiers for breakfast.
Soup for lunch with 2 slices wholemeal bread
Salad with sardines and hard boiled egg for dinner 2 wholemeal bread buttered.
Snacks, crackers with cottage cheese.
