I Have A Cooked Chicken Breast From A Rotisserie Chicken…

What all would be good to be made from it? I am thinking chicken-pesto pizza. But any other ideas would be welcome. We seem to be having rotisserie chicken pretty often these days.

I enjoy Chicken salad sandwich with rotisserie or, Chicken broccoli Alfredo. Take broccoli and combine with cooked pasta, throw in rotisserie chicken. Make an Alfredo sauce, so easy... cream, garlic and Parmesan cheese in saucepan and pour over pasta. It is Delicious!!

@Coralmist brocolli-rice casserole is good with chicken chunks in it, I’ve made that a few times.

Cubed and cooked into a Noodle soup with veggies & with pasta/noodles on a cold evening.

Fast: Added to one of the variety or fairly cheap pre-cooked bagged rice/pasta dishes (rice-a-roni, etc)

Somewhat shredded and make chicken tacos or even chicken spaghetti.

A Chicken Curry Sauce with Onions over Rice.

Chicken Alfredo

Cubed & Warmed, then used on top of or in a Chef Salad or Sensation Salad.

Add to bagged frozen veggie, pasta or potato sides.

Sliced on a toasted roll with 'whatever' to make a sandwich.

You can take the Rotisserie Chicken carcass, (bones, skin, & all) and boil it, making some nicely seasoned chicken stock and Freeze it for a future meal.

I've used the resulting stock in green beans or dried mashed potatoes or anything else instead of plain water.

Meanwhile freeze the breasts whole or pre-diced for a quick meal.

@Incomplet Gave the skin etc to the dogs so don’t have that to cook with. I just have the breast part of the chicken, and it is from Sam’s and pretty good size.
A chicken and rice dish would be good

@Shybutwilling2bfriends I’ve made chicken-fried rice this week. Thought about making a pilaf with chicken, onions,Chicken Better than Boullion and Lima beans or green beans. But we don’t need rice too often.

If you prepare the sauce in this recipe first, and THEN add cubed chicken, and serve it over Quinoa, it would probably be good.

@4meAndyou Knorr sauce mixes are loaded with mono-sodium glutamate so I won’t be buying them.

@4meAndyou oh yes with that green pesto sauce that I have. The pizza I made with it last night was really good. I could make another one today since I only used half of the chicken.

@Nitedoc I cut up some of the chicken twice this week and put barbecue sauce on it and put it in my glass bowl convection cooker to make barbecue chicken, Didn’t take but about 20 minutes for the sauce to set on it.

@Nitedoc I’ve taken leftover roast turkey, chopped it up and steamed in a bit of water to soften it up good & then simmered it with barbecue sauce to make sandwiches. Better than eating plain turkey 3 days in a row or more. It has a completely different flavor. Would work with chicken too.

I'd just have it plain 'n' simple - perhaps with some corn on the cob and potato salad.

@Prettybratbi1tch I can’t have anything with gluten.
Add it to some packaged chicken flavored rice, like Knorr's. That's what I am having tomorrow evening. Maybe some brocolli, green beans, or brussels sprouts on the side.

@RoguishEyes Knorr’s has monosodium glutamate in it and I won’t be buying it. It causes heart palpitations for me.

I’m a little late to this post but that would be good shredded, seasoned then added to some pastry … rolled into dumpling shapes then baked in the oven for 25 minutes … a nice dip would finish that off nicely nom
