i only ever had a cheese dish where it was white sauce over fish and some cheese on top baked in the oven. any other way than that i don't see it as an option

If you think cheese on fish is bad, I live in an area where people have gravy (the same kind of gravy as for a roast beef) poured on fried fish.

@Stephie YES!!! I used to make Camarones Flores...which is jumbo shrimp, rolled in garlic, wrapped in bacon, and grilled on the BBQ. I always made a spicy queso dipping sauce for them...which was absolutely amazing!
