Cooking for one is not fun, at least not for me

I'm a quite decent cook. But I've elevated my cooking game so much that I can't cook anything that I won't want to eat as leftovers. When I went out for Chinese yesterday, I didn't bring home the leftovers, because they weren't good enough for a second meal. What happens is, I'm stuck preparing these 3 pan meals in order to have leftovers I'll happily eat, and then I have to do all the dishes! ( I don't have a dishwasher ).

I just finished a lunch of leftovers. I like to do a “fill the grill” Sundays with enough food to last a while. It’s an easy way to fix meals. I don’t eat out a lot. I also like simple meals but I try a lot of new things and I’ll spend a good amount of time cooking when I’m on vacation or out for holidays

@ArtieKat same. Wish it wasn’t in the very back because I feel like someone is stealing my food. Worst part is getting there and seeing folks gathered like vultures around it

I am a fair cook, also...probably not what you would call "elevated". but I used to do catering, and worked in a restaurant for about 3 weeks till my back gave out.

I just can't stop cooking for an army. AND I feel your pain, regarding the dishes.

Do you have a big freezer? I batch cook at the weekends when I have more time and freeze individual portions for later.

Yes, hsve the same meal twice. It saves cooking twice, bf you don’t throw away.

I agree. Whenever I'm alone, I'm fine with just making myself a cup of instant noodles for dinner rather can cook a large meal just for myself.

i have a brother who will eat anything. so even if it is just the 2 of us, no leftovers. last night, he ate leftover pot roast, my ziti, his fettucine alfredo and spaghett. i ate the salad and cake.
